We visited after hearing it had the best pasta in Rome. I tried the amatriciana, but it wasn’t quite as good as I expected (I’ve tried it elsewhere before). For me, it had too much sauce, which made it taste a bit bitter. That said, the starter was really good and worth trying.
We stopped by Caligola after visiting Vatican City. They take reservations online through their website. The starter of figs wrapped with guanciale was a nice balance of salty and sweet. The spaghetti with zucchini (alla scapece) was an interesting and refreshing pasta since the zucchini was prepared with vinegar and mint. I found the pasta alla gricia on the salty side...however this was a common theme with all the Roman pastas we tried in different restaurants.
It was phenomenal! I am so sad, that I found this spot on my last night in Rome! But in the other hand, it was a most wonderful end of my Italian vacation this year! Food is honestly the best! Staff is very friendly! Hostess is gorgeous!
We went to this restaurant for the first time on Monday, 12/05, after visiting the Vatican. We were served by Jason, who was extremely polite and made us feel welcome. Jason, thank you for making the suggestion of the best Cacio e pepe with truffles and short pasta that I ever had in my life! For starters we had Brie Brûlée and Magnum di patate e porchetta, both delicious, and for dessert we had lemon tart with Italian meringue, and it was divine! I cannot recommend this place enough and Jason for his impeccable service.

Despite the restaurant not being at full capacity, we found ourselves waiting an inordinate amount of time to place our orders and receive our meals. On two occasions, we had to leave our table to seek assistance, only to find the waitstaff engaged with their mobile phones. This inattentiveness detracted from the otherwise delightful dining experience. In summary, while Caligola Osteria Sincera offers an exquisite culinary journey in a beautiful setting, the service leaves room for improvement. With more attentive and professional staff, this restaurant has the potential to provide an outstanding dining experience that matches the quality of its cuisine.
⭐⭐⭐⭐⭐ One of the best restaurants I’ve ever eaten at. The food is absolutely phenomenal .. authentic Italian dishes made with care and incredible flavor. The atmosphere is warm, welcoming, and truly feels like you’re dining in the heart of Italy. The service is top-tier, attentive, kind, and knowledgeable. The wine list is also excellent, with bottles like the Caligolino Bianco offered at a great price. Everything from the appetizers to the secondi felt crafted with love. If you’re looking for a real Italian experience, this is it. Highly recommend and would come back in a heartbeat.
Amazing food & service - highly recommend it! All dishes were exceptional, the ravioli with lemon, the carbonara, and a chocolate fudge to die for! The four stars for atmosphere were because we did ask to sit outside as we had very nice, sunny weather, but the street was vey busy and noisy.
